Reduced trim loss
The blocks of cheese are squared and shaped under compression during packaging and are 'firmed' during the cooling process resulting in flat surfaces with well defined edges and corners.
The off-cuts from pre-pack lines can now be as low as 0.5%.
Improved flavor consistency
The controlled uniform cooling process of the individual blocks eliminates the problem of off flavor that occurs in the center of blocks of conventionally cooled palletized cheeze.
Increased yield
Uniform cooling allows moisture content to be optimised without the risk of incurring 'warm curd' flavor defects.
Labor saving
The system requires one or at most two operators.
